Cencibel Explores German Wines
At Schloss Sheligo

Cencibel gathered in the home of steering committee member, Beth Sheligo, who as you know is our German Wine Goddess (GWG), a fact proven by the blowout event she created. An event not to be missed, this was highly educational on both German wines in general to discussions on wine and food pairing, for which the GWG has a very special gift. The foods were divine and the wine pairings each different and wonderful. Beth turned it up a notch with each course (watch out, Emerill!) until all left with great big smiles and slightly bigger waistlines!

The Welcome Wine ~ 1995 Majorastfullung Riesling Extra Dry Sekt – Reichsgraf von Kesselstaat, Mosel. Made by a woman, this sparkling Riesling had an unbelieveable nose of floral notes, sweet fruit and rose petals.

Smoked Trout Cheesecake, decadent and rich, was served with a lesson in how to read the label. From my notes, the first wine was a

1979 [vintage] Kallstadter [the town] Saumagen [the vineyard] Riesling [grape] Spatlese [style, sweetness level], Koehler-Ruprecht [producer], Pfalz [region]
1985 Bacharacher Hahn Riesling Spatlese, Toni Jost, Mittlerhein
1990 Niersteiner Hipping Riesling Spatlese, J.u.H.A. Straub, Rheinhessen

Note on food and wine pairing with this course: The acidity was resolved in these wines (note their ages) making them a good match for foods prepared with a long, slow timeline.

Grilled Jumbo Shrimp with Shaved White Chocolate and two sauces (yes, you read that right and it was fabulous!) was accompanied by wines with higher acidity; each unique and perfect in its own way with the dish. Another amazing grouping:

1998 Erdener Treppchen Riesling Spatlese, J.J. Christoffel, Mosel (my note: creamcicle, which is was an element in one sauce too).
1998 Hochheimer Kiechenstuck Riesling Spatlese, Franz Kunstler, Rheingau (tying to the white chocolate here)
2000 Dr. Loosen Riesling Qba, Mosel (this chapatolized beauty was loaded with pineapple)

A well-chosen selection of cheeses – Pyrenees Peppercorn, Wensleydale with Apricot, White Stilton with Lemon Peel, Drunken Goat, St. Andre and Smoked Gouda – was served with the following, resulting in some fun experimentation in matching…

1997 Gewurztraminer Qba, Valckenberg, Pfalz
1998 Binger Schlossberg Schwartzerchen Scheurebe Kabinett, Ohler, Rheinhessn

If one had to be chosen, this might be it for my favorite dish of the evening. Lucky enough to have had [several pieces of] it recently, I couldn’t wait for the Peachy Pound Cake, which was served with:

1989 Westhofener Morstein Riesling Auslese, Wittmann, Rheinhessen
1989 Niersteiner Bildstock Riesling Eiswein, Klein, Rheinhessen
1992 Kurkheimer Nonnengarten Rieslaner Beerenauslese, Darting, Pfalz (my pick for wine of the night)

An event never to be reproduced, this evening was lauded by all in attendance, which included some of our men-friends thanks to my husband who secured a seat without my knowledge by going directly to the hostess. He is a slick one! Hey, I would have done the same thing in his place to get “in” on an event like this one!!!
