Just when you thought your senses had experienced the best there is, Owner Greg Salisbury and chef Ross Essner (formerly of Bleu), combine their formidable talents to bring forth a feast for the eyes as well as the palate in a former apothecary turned bistro. The flavors virtually sing in seasonally exquisite choices prepared in exciting combinations based on classic foundations. Notice a paucity of carbohydrates, a personal preference of the hostesses.

For this dinner, we will return to our traditional BYO format. We will have a set menu, and wine suggestions, based on our test dinner, are listed for each course. (If you have dietary restrictions, please let us know when reserving so that we can advise the chef of special needs.)

We will be seated at tables of four to six people, and each person should plan on bringing one bottle of wine, selected to accompany a specific course. Please let us know for which course you will bring wine when you register. We will arrange the seating so that each table has wine for every course.

The Menu

Amuse Bouche
Seared diver scallops served over crab-fennel-shitake ragout

Recommended wine: a New World sauvignon blanc, or a German Riesling Kabinett

First Course
Grilled scampi: Severino cavatelli, pesto, tomato-star anise jam dramatically presented in a black bowl, (an amuse yeux)

Recommended wine: New World semillion. A sauvignon blanc or chardonnay could also work.

Second Course
Seared black bass: potato-chorizo-red pepper hash, little neck clam broth, a symphony of flavors!!!!

Recommended wine: Chef recommends n unstructured pinot noir or syrah. We found that a mature California Syrah (1987 Kendall-Jackson) and a 1990 Ridge Geyserville (zin, petite syrah, carignan blend) also worked well.

Third course
Grilled, marinated baby lamb chop: butternut squash risotto, fiddleheads and whole baby garlic - The colors and flavors sing!!!

Recommended wine: Mature cabernet sauvignon or merlot.

Dessert - Your choice of Crème brulee, chocolate pot de crème, or "Homage to West Philly" Sweet Potato Pie

Recommended wine: A Sweetie


Notes...
1. Seating is limited in this newcomer already sighted in New York Times and Philadelphia Inquirer, so please reserve ASAP.
2. The cost is $60 per person, tips/tax included
3. Cancellations after June 1st will be asked to cover the cost of their seat ($45)
4. OK to BYO Glasses and one wine per person; let Deb know which course & wine details when you register.
5. TIP: Only street parking is available, share a ride if at all possible
