Opener
Marinated red peppers and Asiaggio cheese
First course
Crabmeat cheesecake, with onion, wild mushroom and cream reduction sauce
Second course
Okra soup, with shrimp and crabmeat in seafood broth (spicy)
Third course
Crayfish salad with crumbled gorgonzola cheese over mescaline greens with a light balsamic-leek vinaigrette (wine suggestion: Chardonnay)
Intermezzo
Fruit sorbet (chef's selection from fruit of the day)
Fourth course
Wild mushroom & duck gumbo, with grilled andouille sausage (peppery)
